And covering it with jalapeño havarti.  And baking it until it’s crisp.

Pulled Pork and Chive Buns

I was looking through my bookshelves this morning for the new book I bought last week (I ended up finding it underneath the coffee table… weird) and I had a flashback.

I must tell you, I have a love for a few hilarious cult films & musicals (yep I said it, musicals), but none more than The Rocky Horror Picture Show.  It is by far my all time favourite – I know the words to almost the entire movie off by heart and I can proudly get up and dance through the entire thing.

Strawberries & Cream Tartlets

Men have to be the least organized people on the planet.  Period.  After asking twenty times (so much so that it had definitely become nagging) I still wasn’t getting a solid answer about what I should bring to Joey’s friend’s barbecue yesterday.  My go to dishes are always desserts, so that’s what I made.  Little did I know that there was already a hefty supply of desserts on hand.  Oh well.  These tartlets were a big hit.  Everyone seemed to like them.

But seriously – what’s not to like about a sweet pastry crust filled with strawberries and topped with a calorie busting, vanilla flecked creme anglaise?

Easy Lunch – Open Faced Egg Salad Sandwich

On my quest to be more open to new foods, I amazed myself.  Thoroughly.  I (of sound mind and free will) made and ate an egg salad sandwich.  Let me tell you – this was nothing short of a miracle.  I grew up surrounded by gloppy, sloppy sandwiches filled with more mayo than meat – and I refused to eat each and every one of them.  I down right detest mayo.  It’s the weirdest substance, looking like a semi congealed pile of phlegm.  It jiggles, it smells weird and it tastes just as disgusting as it looks.

But I wanted to try eating a hard boiled egg in sandwich form.  So I took it upon myself to change the texture and taste of the ever present egg salad.  What I came up with was something chunky, a tad creamy and it sure as hell wasn’t my mother’s egg salad.  (Even after I typed that, I don’t really think I can remember my mom ever making or eating an egg salad sandwich.  So maybe I would be more accurate in saying “it sure as hell wasn’t my father’s egg salad.”  I digress).

Double Chocolate and Cranberry Brownies

Finally something Joey doesn’t like! And no I’m not posting the recipe for something completely strange and disturbing! He doesn’t like the cranberries! Woooo! For once a pan of brownies has lasted more than 24 hours, and I think they’re phenomenal!
They’re easy like brownies should be, they’re quick to make, they’re full of chocolate, turn out so light and fluffy, and they make a big pan. One big enough to last through a weeks’ worth of chick flicks and the ‘so this is Christmas’ commercial’ (maybe only one shot at the commercial, and maybe not the whole thing, since I can’t make it through 3 seconds of it without bawling like a baby and covering my ears).
And they’re all mine!

Let me set the stage for you. We are couped up in a small apartment, the temperature dropped 12 degrees and it started blizzarding. We don’t own a barbecue. We have two beautiful racks of short ribs. Pan Seared Steak and Crispy Potatoes

Have I ever mentioned how much I love making dinner on Sunday?  Especially when it’s just Joey & I and I don’t have to work around other people’s schedules or think about what other people like?  It’s one of the most relaxing feelings and is usually the time I end up with the most delicious suppers.

After losing most of my Saturday to a headache, I pulled together a 15 minute dinner last night (garlic chicken and gnocchi with the spinach pesto I made last week).  Tonight’s dinner only took about 40 minutes to pull together (and most of that is waiting for the potatoes to parboil and cool) and blew away my expectations of a simple Sunday dinner.

What I’m Looking Forward To This Spring

I’ve been a bit of a creative rut lately.  Both with food and my writing.  I’ve still been both eating and writing, but nothing worth any note.  I’ve made casseroles, giant plates of french fries and I’ve written pages of notes/thoughts/potential outlines for more than one story, but I just can’t seem to keep motivated long enough to see anything come of it.  Usually, when I hit a rut like this it will last for a week or two and then I’m back to it, picking away slowly but surely at whatever it is that has been perplexing me.

This time around, it seems like this rut has grown to the size of the Grand Canyon and I’ve had to start coming up with creative ways to get myself out of it (I am well aware of the irony of using creativity to get out of a creative rut, but [for once] I’m not bothered by it).  So I’ve come up with this list of what I’m looking forward to and I thought I would share it.
